Sourced from the Oppenlaender vineyard in Niagara-on-the-Lake, from vines planted in 1999, the 2022 Cabernet Franc was harvested on November 4th, 2022, using an Opti-Sorter harvester that destems and sorts the fruit. After delivering the berries to the winery, the grapes were lightly crushed and fermented in bins. Punchdowns were carried out daily until pressing, after spending three weeks in contact with the grape skins and seeds. The wine was aged for 20 months in a mix of new and used French oak barrels (five barrels) before blending and bottling. This is a medium-bodied Cabernet Franc with notes of raspberry, cherry, vanilla, and pepper.
