A signature spirit from a new distillery in Ottawa, this gin is a tribute to the local terroir and features local juniper hand foraged by the distilling team. This pot still gin is distilled from 100% Canadian grains grown locally in the Ottawa Valley, features local botanicals, and of course the hand-foraged juniper. This gin has a bright, pine-forward flavour reinforced by a malty sweetness and peppery finish.
Using the traditional pot still method of crafting gin, they start with a malty base that retains much of the original grain character. Next, they steep botanicals in the spirit overnight. This longer infusion allows the gin to pick up the sweeter side of the botanicals - juniper, coriander, and orris - botanicals that grow in the Ottawa Valley. Due to Ogham's using only locally available botanicals, there is no citrus in the gin, however the marrying of juniper and coriander creates a delicate citrus profile. Orris - the root of the Iris flower which was traditionally used in the perfume industry to bind the aroma to the medium fills a similar role here, along with lending notes of raspberry. It is this advanced chemistry which allows Ogham to maintain such a simple collection of botanicals whilst yielding complex flavours in this gin. A true local trailblazer!
Batch three of these limited production gins is made with juniper that the team hand foraged in Mississippi Mills. This local juniper has a higher oil content than previous batches, which contributes to the natural haziness of batch three when stored at room temperature or below.
