From new label Divergence comes a sophisticated and textural white, with provenance at the Grimsby Hillside Vineyard. This is a weightier wine than its pale colour would suggest, with a slow fermentation on lees bringing lots of complexity.
Delicate aromas of pear, honeydew, and white peach. The voluminous palate brings more of the same, with a subtle almond note on the finish. This wine has surprising cellaring potential, and will evolve nicely over 2-3 years. Decant and pair today with fish, grilled chicken, or roasted ham, or any meat basted with a fruit glaze.
